What is crema and why is freshly roasted coffee important?
Crema is the golden, frothy layer that forms on top of a well brewed espresso forms. It is an important element that not only improves the aesthetics of the coffee, but also contributes to the overall taste experience. This layer is created by the emulsion of oils and bubbles of CO2 during the extraction process of the coffee. The crema has a rich, creamy texture and contains many of the flavors you can taste in the coffee. It is this unique combination of flavors and textures that gives an espresso its unmistakable character and is recognizable in the desired "Tiger stripes.
A good crema is also a sign of quality. The viscosity looks like our honey which also makes your mouth water. It indicates that the coffee is well brewed and that the beans are fresh. When brewing espresso, it is important that the coffee is extracted under high pressure, resulting in optimal crema. This process is essential because without good crema, an espresso can taste bland or watery. Coffee lovers consider crema an indicator of the overall quality and freshness of the coffee.

The role of coffee beans in creating good crema
The choice of coffee beans is crucial to obtaining a perfect crema. Different varieties have unique characteristics that affect the final taste and texture of the coffee. Arabica beans, are known for their sweeter and more complex flavors, while Robusta beans often offer a stronger and bitter taste. Robusta beans also have more oil, which can contribute to a fuller crema. Blending different beans can also lead to a richer flavor experience and a better crema.
In addition, freshness of the beans is an important factor. Coffee beans quickly begin to lose their aromas and flavors after roasting. Therefore, it is essential to choose freshly roasted beans. At Logies op Dreef we use locally roasted beans which are delivered fresh. This guarantees not only excellent taste, but also optimal crema.
Delicious espresso at the touch of a button in your Studio
As a coffee lover I precisely weigh out 18.5 grams of beans for one cup of coffee. I then grind my coffee beans for each cup of coffee in an old catering grinder with large grinding discs that make the grind very consistent. With my espresso machine, I set the water temperature to the degree to get exactly the flavor experience I desire. And then I start the water pump which starts the extraction process until a total of 37 grams of delicious espresso has flowed into the cup in a maximum of 30 seconds with a brewing ratio of 1:2.
In the studios upstairs and below this is not feasible, but since I want to include my guests in my hobby as a Barista, you can use a fully automatic machine with fresh beans there as well, a great espresso put.
